Neuromancer Omelet

1 to 1-1/2 cups crushed white tortilla chips
3 large eggs
2 Tbsp salsa
1 Tbsp milk
3 Tbsp margarine
pinch pepper

Combine eggs, salsa, milk, and pepper in mixing bowl, whisk until smooth. Melt margarine in teflon skillet. Transfer 1 Tbsp melted margarine to egg mixture, mix well. Add crushed tortilla chips to skillet, spread into an even layer. Pour egg mixture on top, coating evenly. Cook on medium heat until golden brown on the bottom. Flip the omelet, cook until slightly browned on opposite side. Salt lightly, serve immediately. Top with additional salsa.
