Cracklin' Cornbread

1-1/2 cups Cornmeal
1/2 tsp Salt
2 Tbsp Flour
1 Egg, well beaten
1-1/4 cups Milk
1-1/2 cups Cracklings*
2 tsp Sugar (optional)
3 tsp Baking powder (omit if cornmeal is self-rising)

Combine flour, corn-meal, sugar, salt, baking powder, egg, and milk. Beat thoroughly. Fold in cracklings. Bake in well-greased shallow pan in hot oven (450 F) about 20 minutes. Or you can drop by teaspoonfuls on a hot well-oiled griddle and fry until golden brown. 6 servings.

*note- It's subjective, and doesn't effect the taste, of course, but I like the cracklin's broken up so they're about the size of a marble. If you make fritters (frying on a griddle), though, breaking up the cracklin's is essential!
